Clam Chowder

Ingredients

  • 1 cup diced celery
  • 1/2 cup chopped onion
  • 3 cups finely diced potatoes
  • 3/4 cup flour
  • 1 cube margarine
  • 1 quart half & half
  • 1/2 cup water, if necessary
  • 1.5 tsp salt
  • 1.5 tbsp vinegar
  • 1 (6½ oz) can clams

Instructions

  1. Cook onion, celery, and potatoes in enough water to cover.
  2. Simmer until done.
  3. In a separate pan, melt butter and add flour.
  4. Blend with wire whip.
  5. Slowly add half & half and whip until smooth (it will be thick).
  6. Add undrained vegetables, vinegar, salt, and clams.
  7. Add water if necessary to get desired thickness.
