Creamed Chicken & Biscuits

Ingredients

  • ½ large onion
  • 1½ teaspoons butter
  • 4 cups chopped cooked chicken
  • 1 (10½-ounce) can cream of chicken soup
  • 1 cup sour cream
  • ½ cup milk
  • ½ cup chopped pimiento
  • 1 cup shredded mild Cheddar cheese, divided
  • 6 frozen biscuits, thawed

Instructions

  1. Preheat oven to 350°F and grease 11×7-inch dish.
  2. Sauté chopped onion in butter until tender.
  3. Mix onion, chicken, soup, sour cream, milk, and pimiento.
  4. Spoon into dish and bake 15 minutes.
  5. Sprinkle with ¾ cup Cheddar, arrange biscuits, and top with remaining Cheddar.
  6. Bake 20 minutes until biscuits are golden and sauce is bubbly.
