Upside-down Shepherd's Pie

Ingredients

  • 20 oz refrigerated mashed potatoes
  • 1 lb lean ground beef
  • 1 tbsp margarine or butter
  • 1 cup chopped onions
  • 1/3 cup ketchup
  • 1 tsp dried dill weed
  • 1/2 cup loosely packed fresh parsley, chopped
  • 1/3 cup reduced-fat sour cream
  • Dill sprigs for garnish

Instructions

  1. Preheat oven to 450°F. Spray 1.5 quart ceramic or glass baking dish (or deep-dish pie plate) with nonstick cooking spray.
  2. Press cold mashed potatoes onto bottom and up the sides of the dish.
  3. Brown beef and onions, add ketchup. Add to dish.
  4. Bake for 20 minutes or until warmed through
  5. Let cool for 5-10 minutes. Then top with sour cream and dill and parsley and serve!
