Soft Flour Tortilla Shells

Ingredients

  • 10 tablespoons oil
  • 6 cups flour
  • ½ teaspoon baking powder
  • 3 teaspoons salt
  • 2 1/3 cups boiling water

Instructions

  1. Mix flour, salt, and baking powder in a mixing bowl.
  2. Make a well and add oil and boiling water.
  3. Mix with spoon.
  4. As soon as dough is cool enough to touch (approximately 5 minutes), put hands in dough and finish mixing
  5. Take a piece of dough approximately 1" diameter. Roll in ball.
  6. Put dough on well floured board and with rolling pin make an 8" diameter circle.
  7. Cook on 10" diameter cast iron pancake griddle. Cast iron is not to be greased to cook shells. Heat cast iron with medium flame. Sprinkle water on cast iron and when it beads then it is ready to use.
  8. Put shell on cast iron. Air bubbles will form while cooking, poke bubbles with end of fork. Turn shell over and cook other side, poking out bubbles.
  9. Place shells (cooked) between 2 wet terry cloths to steam (this will keep them pliable). Continue to stack each succeeding shell on top being sure to keep cloth damp.
  10. Shells take 1–1 1/2 minutes to cook
